NUTRITION

I have to bite my tongue when hearing someone promote the benefits of a low fat diet. In 2012, an article I read suggested that the low fat recommendations we have relied on for decades were based on the biased and severely skewed results of the 1957 “Seven Countries Study” by American nutrition scientist Ancel Keys. Eventually, his resultant theory that Fat Makes Us Fat was so convincingly perpetuated by the grain industry “experts”, it became gospel to the masses of people who took their dietary health seriously. Perhaps Ansel’s initial intentions were good, but his advice bred a low fat, high carb culture whose health was about to decline significantly.
Unfortunately, this is just one example of how nutritionally misled we are in the western world. Not surprising, really, when you consider that the Food Guides were developed in part by people in the employ of big corporations whose profit margins would be directly impacted by the recommendations set forth. So, if the advice we are fed comes from corporate lobbyists who negotiate how many servings of their food group are recommended in our national food guide, I think I’ll swallow that advice with a humongous grain of salt.
