Start making the halal burgers in batman patties and caramelized onions as soon as you start prepping the grill, giving them time to cool while you get it going.
Beef
Moroccan flavouring with mint and sweet dried apricots add an exotic flair to this quick and easy burger recipe - plus, it is surprising nutritious.
Combine ground beef, oregano, salt, black pepper, paprika, cayenne pepper and garlic powder in a large bowl with clean hands until everything has combined evenly. Use clean hands to shape into 6 small patties using this meat.
Add 1/4 cup crustless breadcrumbs for an extra crunchy texture when making these patties. Soak the breadcrumbs in 1 teaspoon of olive oil before crumbling them into the meat mixture - this helps the patties stay together during cooking! Cook on either a grill or frying pan over medium heat, turning once until both sides have turned golden brown before serving on toasted buns with lettuce, tomato and plenty of Preserved Lemon-Cilantro Yogurt Sauce (this makes 8 burgers).
Lentils
These veggie burgers feature lentils as the basis of their structure, adding protein and fiber. Plus, thanks to the toasted sesame seeds they also boast crunch. You can make them up to one day ahead and store in the refrigerator!
Cook the lentils in a large pot filled with enough water to cover by 4 inches, bring to a boil, reduce heat and simmer until they're tender but not soggy, about 10 minutes. Drain and set aside for cooling before draining off any remaining liquid.
Combine vegetables with salt, pepper and turmeric before cooking in oil until softened, stirring often. Finally add garlic as well as cumin, smoked paprika and harissa (or additional spices of your choice).
Process the cooked vegetables and remaining ingredients in a food processor until smooth and combined, placing any sticky spots in the refrigerator until firm enough for handling. Form into four 4-inch patties; spread on buns with chutney; top them off with yogurt (if desired); serve alongside cucumber-tomato salad as an accompaniment.
Caramelized Onions
Caramelizing onions requires patience and low heat in order to extract their natural sugars, but the result is an irresistibly delicious jammy caramelly-savory-sweet topping that elevates any meal. In Morocco this dish is known as Tfaya; typically served over couscous or rice but also suitable for grilling meats & vegetables.
Kayotic Kitchen provides an easy way to enjoy this Moroccan condiment on your burger. Onions are cooked down with some brown sugar and raisins before being combined with ginger, saffron and cinnamon spices to form this Moroccan spread.
Experience an irresistibly delicious twist on the classic French onion burger or go for lighter alternatives such as black bean burgers topped with lettuce, roasted tomato and caramelized onions - served up with harissa mayonnaise for the ideal lunch or dinner meal!
Harissa Mayonnaise
Serve this Moroccan-inspired burger to impress friends and family alike. The combination of spices is different than typical burger fare but works extremely well and tastes amazing!
Mix together ground beef, salt and pepper as well as one teaspoon of Ras el Hanout in a large bowl using your hands. Wet your hands lightly before shaping into 4 3/4-inch oval patties.
Combine mayonnaise, caraway seeds and one tablespoon of harissa in a small bowl until thoroughly mixed. Spread on buns before topping with the patty, caramelized onions, tomato and cucumber slices. Close and serve!
To create the tahini sauce, combine water, tahini and lemon juice in an upright blender until everything is blended evenly. Next, stir in chopped parsley, garlic cloves, salt, cumin and paprika before pulse blending a few times more to incorporate. If your sauce seems too thick to stir into milk or water until desired consistency.
